DINNER WITH MYCELIUM

RESEARCH: SEED I RADIAL I LABVA

Dinner with Mycelium seeks to experiment with alternative resources in the world of food development materials and processes, as well as our relationship with them. This laboratory takes the form of a dining room and an incubator for mycelium (the vegetative part of fungi) and ferments, which constitute the liquid elements arranged on a living table where visitors can become users and diners at a table shared with the mycelium.

The installation uses natural and living materials, experimenting with the artifacts that sustain them and the food items and resources they produce. The laboratory showcases the different stages and potential uses of mycelium throughout the exhibition period, playing with the tension and relationship between the living organisms on the table: the diner, the human body; and the mycelium, the mycological bodies that are growing and evolving.

​The table displays the mycelium’s growth process over time, transforming it not only into a dining space but also into its own producer of materials and food. In this way, “Dinner with Mycelium” offers visitors the opportunity to experience the sensory, tactile, and gastronomic characteristics of the materials, while questioning the voracious extractivist production system and offering the chance to see, feel, and experience an alternative constructive and food-based universe formed by living materials.
